It's a little indulgent, that's for sure, but really good. I had some apricot preserves left over from Christmas. From what I can tell, they make the best cookies, so I decided to try my hand at some pumpkin cookies. I was expecting them to be pretty good, but they were amazing. So much better than the chocolate chip cookie. I like using cherry pie filling in my cookies because the tartness from the pie filling gives the cookies a nice kick in the taste buds. I made a few tweaks to this recipe and I think they turned out pretty good. 1/3 cup apricot preserves, melted and cooled 1/3 cup unsalted butter In a stand mixer with paddle attachment, mix butter and preserves. The butter should be melted and mixed with the preserves. Pour into a bread bowl and chill in refrigerator until firm enough to roll. Add 2 1/2 cups of flour, baking soda, baking powder, and salt to a large bowl. In a separate bowl, mix together molasses, egg, buttermilk, melted butter, and milk. Add molasses mixture to dry ingredients and mix until the dough comes together. Grease two cookie sheets and then, scoop dough onto the cookie sheets, about 1/2 inch apart.
